Ingredients Of Newfoundland Cod With Shrimp Raita
For the Fish:
For the Raita:
- 120 gms shrimp, boiled / precooked
- 2 cherry tomatoes
- 1 Tbsp of olive oil
- 2-3 basil leaves
- Half a cup of yogurt
- 1 Tbsp red bell peppers, finely chopped
- 2 Tbsp spring onions, finely chopped
- 1 green chilli, finely chopped
- A pinch of cracked black pepper
- Salt to taste
For the Chutney:
- 1 cup partridge berries or cranberries
- 2 tsp maple syrup or honey
- 1 Tbsp of olive oil
- 1/2 tsp of mustard seeds
- 1/2 tsp of cumin seeds
- 1/2 tsp of fennel seeds
- 1/2 tsp garlic, finely chopped
- 1/2 tsp chopped ginger, finely chopped
- 1 tbsp onions, finely chopped
- 1/2 habanero chilli, finely chopped (optional)
- A pinch of black pepper
- A bit of chopped parsley
- A pinch of orange zest
- Juice of 1/2 an orange
- Salt to taste
How to Make Newfoundland Cod with Shrimp Raita
1.Marinate the cod fish with salt, pepper, lemon juice, turmeric powder and red chili powder, little bit of flour and keep aside for 15 minutes.
2.In the meantime, mix all the ingredients for the raita together in a bowl, except the yogurt.
3.Whip the yogurt and mix it with other ingredients.
4.Keep this raita in the fridge.
5.In a pan, heat the oil and temper the mustard seeds, cumin seeds and fennel seeds.
6.Add the onions, ginger and garlic, saute till soft.
7.Add the berries, salt, pepper, maple syrup, habanero chilli, parsley, orange zest and juice of half an orange and mix all the ingredients.
8.Cook this for about 4 to 5 minutes, till the mixture has combined and thickened.
9.Keep aside.
10.In another pan, heat the olive oil and butter and pan-seer the cod for about 3 minutes on both sides.
11.Plating: On a plate, place the cod fish, drizzle some berry chutney over and serve with the chilled shrimp raita.
